This season, these are the nine Mexican/Hispanic food, desserts and drinks you should try/enjoy at least one time. Posole Posole is a soup that has some type of shredded meat, pork or chicken. It also has lots of hominy, which are whole kernels of dried field corn. Sometimes people add pinto beans. Posole is best served with toasted buttered bread or tortilla. And you don't have to, but people like to garnish the soup with lime, cilantro, green onion or regular onion, cabbage, radishes and spicy chili flakes. It was a chicken sandwich that instead of having two pieces of bread to hold together the meat and fixings ... had two fried chicken fillets. The anatomy of the sandwich looked like this: a fried chicken fillet on the bottom, cheese, bacon and cheese in the middle, and topped off with another fried chicken fillet. It was a deliciously over-the-top and decadent idea. Check out free Pima art exhibit ‘Egress’

By Alex Jimenez Pima Community College will host Egress - an art exhibit with work from three London-based artists. Admission to the exhibit is free and is being held at the Louis Carlos Bernal Art Exhibit on PCC’s West Campus through Oct. 8. The art displayed is all made on paper and was completed during the COVID lockdown by Alice Browne, Anthony Banks and George Little. All three of the artists attended the Royal College of Art in London. “Each artist explores abstracted themes about London from ‘Leftovers’ left on tables to the surrounding English environments to imagined ideas about San Sebastian to Orbits,” said gallery director David Andres in the exhibit introduction. “‘Egress’ is but a snapshot of what was produced.” George Little’s art uses restaura...

By Nate Martinez Pima’s volleyball team did not have an easy schedule last season, but outside hitter Jessica Bright-Schade and the Aztecs made history by advancing to their first national tournament. Due to COVID, it was difficult to find ACCAC teams that could play regular season games, leaving Pima with a slate of NJCAA Division I competition. Despite the elevated level of competition, the Aztecs, who compete in Division II, were able to secure a spot in the NJCAA tournament in April. Pima Community College Governing Board member Catherine Ripley By Kyler Van Vliet Catherine Ripley has spent her life traversing the world working as a U.S. diplomat, counter-terrorism strategist, professor and – for a few months – as a bassist. This January, Ripley started her new career as a member of the Pima Community College Board of Governors, representing District 1 in Arizona. She won the general election last November in 2020 against Ethan Orr with a campaign focused on increasing enrollment through formal partnerships with local High Schools, the JTED Program and the Earn to Learn Programs.
