There’s a new food truck on campus: Gigi’s Mexican Peruvian Fusion. The business made it’s debut as the first truck for Food Truck Tuesdays on Pima Community College’s Downtown Campus on Oct. 7. If you didn’t get there early, you missed out, because Gigi’s sold out! Was it that good? For sure.
“It reminded me of when I grew up in Mexico,” said Edward “Eddie” Ramos, an HVAC student at PCC who works for Lifetouch Photography. He said it tasted like the tacos and beef his grandma made him when he was a boy, and that he would definitely buy it again.

Owner Sandra Espinoza said they sold out of everything they had almost 45 minutes before their closing time. She said they were on campus about five years ago and will be back to sell again next week. Be sure to be first in line if you want to experience the hype.
Gabriel Padilla, one of the construction crew, sampled the chicken bowl and described it as “fresh and clean,” and just what he was looking for. He said there was more than enough for 16 dollars to have some left over.
Gigi’s Mexican Peruvian Fusion also returned to the Downtown Campus on Tuesday, Nov. 25. To find out where else you can sample Gigi’s Mexican Peruvian Fusion or when they’ll be back, check out their website.
In the meantime, try out these trucks coming soon to the Downtown Campus. You can find them parked in gravel area by the CC Building, west entrance (see map):

Northwest Campus’ food truck schedule is a little more ambitious. They will be hosting as many as eight trucks a week – one for breakfast and another for lunch. Trucks will be located at the north parking lot near building A. Here are some of the featured food trucks and schedules from October that we can expect to see similarly in the next month, as well:
